Serves 8
3 1/2 cups blueberries
3/4 cup sugar
1/8 teaspoon salt
1/4 teaspoon cinnamon
3 tablespoons flour
2 tablespoons butter
2 9-inch pastry crusts
1/4 cup milk

In a large bowl, mix blueberries, sugar, salt, cinnamon, and flour.  Line a shallow pie pan with one pastry crust on the bottom.  Pour in blueberry mixture.  Dot top of blueberries with butter.  With a pastry brush, brush edge of pie crust with water.  Roll top crust to fit plate.  Fold top pastry dough over pie and cut approximately 4 small slits on the fold. Press down along edge.  Trim crust close to the edge of the pie with a fork or create a decorative edge.  Pour 1/4 cup milk over pie.  Bake pie at 475 degrees for 15 minutes.  Reduce heat to 350 degrees and cook an additional 15 minutes.  Cool and serve.
