3 cups all-purpose flour
1/4 cup sugar
1/2 teaspoon salt
1 1/2 sticks (12 tablespoons) unsalted butted, chilled, cubed
1/2 cup shortening, chilled, cubed
3/4 - 1 cup cold water

Stir flour, sugar and salt together in a large bowl.  Using a pastry blender, cut in the butter and shortening until the flour mixture becomes the size of peas.  Add water to flour mixture stirring until the dough holds together.  Form dough into a ball.  Divide the ball in half and wrap in plastic.  Chill for one hour.  To roll, place on a floured surface and roll into a 14-inch circle.  Transfer to pie plate.  Trim edges to 1/2 to 1 inch overhang.






Makes 2 single 9-inch pie crusts
