(2) 8-ounce cans white beans or cannalini beans, drained washed
2 Baquette Bread Loaves2 cloves garlic, peeled
1 bunch fresh basil Salt and Pepper
1/2 cup pine nuts   1 cup raosted pumpkin seeds, ground
1/2 cup parmesan  1 tablesppon thyme, dried
Olive oil  3 red onions, peeled, sliced thin

In a medium size saucepan, saute red onions on low heat until carmelized, about 20 minutes.  Set aside.  In a food processor add drained white beans, thyme salt and pepper and about two tablesppons olive oil.  Pulse until beans are incorporated.  Set mixture aside.  Slice each baquette bread loaves diagonally into 1/2 inch slices.  PLace bread slices in a plastic bag.  Drizzle olive ol to coat.  Seal plastic bags and coat the bread slices.  On a baking sheet place bread slices and cook at 350 degrees unitl semi-crisp, about 7 minutes.  Set bread aside.   In a food processor add basil, garlic, pine nuts, parmesan, salt and pepper.  As you blend the mixture slowly drizzle in olive oil until the mixture is thick and incorporated.  Set aside.  To assemble take each bread slice and spoon on the pesto mixture.  Top with the white bean mixture followed by the carmelized red onions.  Sprinkle each with the ground pumpkin seeds.  Serve.
