Wash apples. Core each apple, discarding seeds and slice into thin strips. Place apples in a large mixing bowl. Drizzle apples with lemon juice to coat. Add celery, walnuts, cranberries or currants, salt and pepper. Cover mixture and chill in refrigerator for 1 hour. In a small bowl, whisk together the mayonnaise and honey until smooth. Toss dressing with apple mixture. Arrange lettuces on a serving platter. Top lettuce mixture with apple mixture. Serve.
