3 cups shrimp, chicken or vegetable stock.  Water can be used.
12 shrimp, peeled and deveined  4 tablespoons lime juice
2 Thai chiles, sliced thinly2 tablespoons sliced galangal.  Ginger can be used.                    2 tablespoons Thai roasted chili paste
2 tablespoon vegetable oil                               1 tablespoon fish sauce
1 stalk lemongrass, cut into 3 inch pieces       1 cup sliced mushrooms

In a large pot, bring stock to boil.  Add shrimp.  After 3 minutes, take out shrimp.  Add the lemongrass, galangal , lime leaves, chiles, mushrooms, chili paste.  Bring to boil.   Add the shrimp and fish sauce.  At the last minute add the lime juice.  Serve.

You can also use chicken, seafood combination or use a variety of vegetables.
