1 cup Thai Sweet Rice (Sticky Rice)
1-2 ripe mangoes, peeled, cubed
4 tablespoons palm sugar or brown sugar
1/4 teaspoon salt
1 8-ounce can coconut milk
In a pot, soak the rice in 1 cup cold water for 30 minutes. Do not drain rice. Add 3/4 cups more water and 1/4 cup of coconut milk. Add the salt and 1 tablespoon sugar. Bring mixture to a gentle boil. Reduce heat and let steam for 20 minutes. Turn off heat and let rice mixture sit covered for 30 minutes. For the sauce, in another pot add the remaining coconut milk and simmer on low heat for 5 minutes. Add the remaining sugar, stirring until dissolved. To serve, place a scoop of the rice mixture on a plate. Add chunks of mango on top. Top with coconut milk mixture. Serve.
