Serves 6
1 1/2 pounds ground beef
1 onion, peeled and minced
2 cloves garlic, peeled and minced
1 carrot, peeled and diced
Salt and pepper, to taste
1 5-ounce can tomato paste
1 14-ounce can diced tomatoes
1 tablespoon thyme
2 tablespoons parsley, chopped
1 8-ounce can tomato sauce
2 cups cooked white rice
6 medium size green bell peppers, tops removed, seeds removed

In a large skillet, brown beef over medium-high heat, about 5 minutes.  Remove beef from skillet.  Add onion, garlic, carrot and salt and pepper.  Sauté for 2 minutes.  Add tomato paste and mix well.  Return beef to skillet.  Reduce heat to low and add tomatoes, thyme and parsley.  Mix well.  Add rice and mix well.  Spoon mixture into each pepper.  Bake at 350 degrees for 45 minutes.  After 15 minutes of baking, pour tomato sauce over each pepper.  Serve.
