Serves 6
3 pounds  mussels, cleaned
8 cloves garlic, peeled and chopped
1 onion, peeled and chopped
2 jalapenos, finely chopped
Pinch Hot pepper flakes
1 cup white wine
2 bay leaves
2 tablespoons butter
2 tablespoons parsley, chopped
2 tablespoons cilantro, chopped

Use a large pot with a lid or a wok with a lid.  Clean mussels.  Do not submerge mussels in water.  Place mussels in pot.  Add garlic, onions jalapenos, hot pepper flakes, wine, bay leaves and butter.  Cover and let steam for 7 - 10 minutes or until mussels have opened.  Discard any unopened mussels.  Garnish with parsley and cilantro.  Serve with crusty bread and butter.

Patriot Tip

How do you clean mussels?  When selecting mussels, never choose a mussel that is chipped, opened, or damaged in any way.  Fresh mussels have a “beard” located on the neck.  This can be cleaned or removed with a kitchen towel or pliers.
