Serves 6
2 cloves garlic, peeled and chopped
1/2 onion, peeled and minced
1/4 cup butter
1/4 cup flour
2 cups heavy cream
1/4 cup chicken broth
2/3 cup Romano cheese, grated
2 teaspoons lemon juice
1/2 teaspoon hot sauce
1/2 teaspoon salt
1/4 cup sour cream
2 10-ounce boxes frozen chopped spinach, thawed, squeezed dried
1 12-ounce jar artichoke hearts, drained and chopped
1/2 cup white cheddar cheese, shredded

In a large saucepan over medium heat, sauté garlic and onion in butter until golden brown, about 3 minutes.  Stir in flour and while stirring, cook for 1 minute.  Whisk in cream and broth and bring mixture to a boil, while stirring constantly.  Once mixture comes to a boil, stir in cheese, lemon juice, hot sauce and salt.  Stir until cheese is melted.  Remove from heat.  Stir in sour cream.  Fold in spinach and artichokes.  Pour mixture into serving bowl.  Sprinkle with white cheddar.  Serve.
