2 heads Romainne Lettuce or mixed gourmet lettuce (washed and dried)
1/2 red onion, peeled and sliced thinly
2 Roma tomatoes, cut in quarters
1 carrot, peeled and julienned
3 button mushrooms, sliced
1 green bell pepper, sliced
2 green onion stalks, chopped in one-inch pieces
2 limes, juiced and zested
pinch of dried thai chili
2 tablespoons olive oil
sprig of cilantro, for garnish
top with grilled squid, shrimp or chicken, if desired.
Place salad ingrdients in a serving bowl. In a small bowl, whisk together the juice and zest of the limes, dried chili and olive oil. Pour over slad. Serve.
