Serves 6
2 cups water
2.5 cups peeled, diced potatoes
.5 cup chopped onion
.5 cup sliced carrots
.5 cup sliced celery
.25 cup butter
.25 cup flour
1 tsp salt
1 tsp pepper
2 cups milk
1 can creamed corn
6 oz shredded parmesan cheese
6 oz smoked salmon

In a large pot add water, potatoes, onion, carrots and celery.  Bring to boil, turn down heat to a simmer, cover and cook for 12-15 minutes.  Do not drain.  In another pan melt the butter, stir in the flour, salt and pepper until smooth. add the milk gradually, stirring and cooking for a 2 minute boil until thickened.  Add to the veggies and water.  Stir in creamed corn, cheese and salmon.  Heat for another 10 minutes or so until heated through.
