1 red bell pepper, seeded and cubed
1/4 cup balsamic vinegar
1/2 cup olive oil
2 tablespoons honey
1/2 teaspoon salt
1/2 teaspoon black pepper

In a food blender, place red bell pepper, vinegar, honey, salt and pepper.  Blend until smooth.  While blender is running, slowly drizzle in olive oil until thoroughly mixed.  Refrigerate until serving.
