Serves 6
Tomato Relish:
2 tablespoons olive oil
1 tablespoon butter
1 onion, peeled and chopped finely
2 cloves garlic, peeled and chopped
2 bay leaves
2 red bell peppers, cored, seeded and diced
2 tomatoes, seeded and chopped
3 tablespoons parsley, chopped
1 8-ounce can tomato puree
3 tablespoons ketchup
1 tablespoon Worcestershire sauce
Salt and pepper, to taste

Meatloaf:
1 1/2 pounds ground beef
1 pound ground pork
1/2 cup bread crumbs
2 eggs
2 tablespoons thyme
Salt and pepper, to taste
4 slices bacon

Preheat oven to 350 degrees.  In a large skillet, melt butter and olive oil over medium heat.  Add the onions, garlic, and bay leaves.  Sauté for 3 minutes.  Add red peppers.  Sauté for 5 minutes.  Add tomatoes, parsley, tomato puree, ketchup and Worcestershire sauce.  Season with salt and pepper, if necessary.  Reduce heat to low and simmer for 5 minutes.  Remove from heat and let cool slightly.
In a large mixing bowl combine ground beef,  ground pork and 1 cup of reserved tomato relish.  Add the eggs, thyme and salt and pepper.  On a greased baking sheet form the meat mixture into a log about 4 inches wide and 9 inches long.  Lay the bacon slices across the loaf.  Bake the meatloaf for 1 1/2 hours.  Serve with more tomato relish.
