In a large saucepan, melt butter with olive oil over medium heat. Add shallots and garlic. Sauté for 1 minute. Stir in flour. Add nutmeg and salt and pepper. Add half and half and bring to boil. Add spinach. Reduce heat to low and simmer for 3 minutes. Serve.
This dish can also be prepared in the same manner for creamed corn.
