2 tablespoons olive oil
1 tablespoon lime juice
3 tablespoons cilantro, chopped
1/4 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups corn kernels
2 ripe avocadoes, diced into cubes
1 pint cherry tomatoes, halved
1/2 red onion, peeled and chopped

In a large bowl, whisk together the olive oil, lime juice, cilantro, salt and pepper.  Add the corn, avocado, tomatoes, and onion.  Mix well.  Serve.
