Serves 8

3/4 cup sugar
4 eggs
1 3/4 cups water
1 14-ounce can sweetened condensed milk
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Preheat oven to 350 degrees.  In a large skillet, over medium heat, cook sugar, stirring constantly until melted and a caramel color is achieved.  Pour sugar mixture into a 1 1/2 quart ring mold or 9-inch round baking pan, or individual small molds.  Tilt sugar mixture to coat bottom of pan.  In a mixing bowl, beat eggs, water, sweetened condensed milk, vanilla and salt.  Pour mixture over the caramelized sugar mixture.  Set pan on a larger pan, one with sides.  Fill larger pan with one inch of hot water.  Bake flan for 55 to 60 minutes or until knife inserted near center comes out clean.  Cool flan for at least one hour.  To serve invert servings onto a plate.  Garnish with mint, if desired.

What is the difference between sweetened condensed and evaporated milk?  Sweetened condensed milk contains a fair amount of sugar, almost 40%.  Evaporated milk is milk which approximately 60% of its water has been removed by high heat, making it slightly brown in color.
