1 1/2 cups spring mix green
1 cup micro greens
1/2 cup walnuts
1/2 cup beets, cooked, peeled and cut into 3/4 inch pieces
2 ounces goat cheese, sliced
fresh herbs (parsley, dill, basil), chopped
1/4 balsamic vinegar
2 tablespoons brown sugar
1 clove garlic, peeled, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup olive oil

Arrange spring mix and micro greens on a platter.  Top with walnuts and beets.  Roll pieces of goat cheese in chopped mixture of fresh herbs.  Top salad.  In a small bowl whisk vinegar, sugar, garlic, salt and pepper.  While whisking, slowly add olive oil until dressing is combined thoroughly.  Drizzle dressing on salad.  Serve.
