1/2 cup balsamic vinegar
3 tablespoons Dijon mustard
3 tablespoons honey
2 cloves garlic, peeled, minced
2 small shallots, peeled, minced
salt and pepper, to taste
1 cup olive oil

In a food blender, combine the balsamic vinegar, Dijon mustard, honey, garlic, shallots, salt and pepper.  Blend until smooth.  While blender is running, slowly drizzle in olive oil until all the oil is incorporated.  Refrigerate until serving.
