Serves 10
4 Granny Smith apples, peeled, cored, diced    2 cups sugar
2 tablespoons honey    2 tablespoons maple syrup
1 cup vegetable oil2 eggs, beaten
2 teaspoons vanilla extract   3 cups flour
1 2/3 cups pistachio nuts, chopped     2 teaspoons baking soda
1 teaspoons baking powder         2 teaspoons cinnamon
1/2 teaspoon cardamon1/4 teaspoon nutmeg
1 teaspoon salt      powdered sugar

In a large mixing bowl, combine the apples and sugar.  Mix well.  Let the apples sit for one hour.  Preheat oven to 350 degrees.  In a bowl, combine the honey, syrup, oil, eggs and vanilla extract.  Mix well.  Fold the honey mixture into the apple mixture.  Fold in the pistachios.  In another bowl, combine the flour, baking soda, baking powder, cinnamon, cardamon, nutmeg and salt.  Mix well.  Fold the flour dry mixture into the wet apple mixture.  Pour batter into a greased 9" x 13" x 2" baking dish.  Smooth batter out.  bake for one hour.  Remove cake from oven and let cool.  Cut individual squares to serve.  Dust with powdered sugar, for garnish.
